Simple, feel-good weeknight recipe that packs a lot of flavour!

Heat a large pan over medium heat. Toast the pine nuts until lightly coloured. Approx. 2-3 minutes. Remove and set aside.

Add olive oil into the pan. When hot, add sweet potatoes. Season generously with salt and pepper. Give it a quick stir and spread the potatoes evenly around the pan. Leave them to cook until slightly softened. Approx 10 mins.
Note: Stir the potatoes only once every few minutes. We want to get a bit of charring happening! - 3
Add Halloumi and gently stir through with the potatoes, until the Halloumi is lightly coloured. Approx 2-3 mins.

Add the cabbage and again mix everything gently until the cabbage starts to deepen in colour but is still crunchy. Approx 2 mins

Add lentils, sriracha sauce, paprika, and ground coriander seeds. Give it a quick stir so everything is well combined.

Turn off the heat. Toss through pine nuts and rockets leaves. Serve!
