Ingredients

  1. For the Fulki:
  2. 1 cupchickpea flour (besan) (about 120 grams)
  3. Salt to taste
  4. 1 tablespoonred chili powder
  5. 1/2 teaspooncumin seeds
  6. 1small onion, finely chopped
  7. 1 pinchbaking soda
  8. 2 cupsoil (about 480 ml) for frying
  9. For the Pani (spiced water):
  10. 2 glassescold water (about 3 cups or 720 ml)
  11. 1 cupcilantro (about 16 grams)
  12. 4green chilies
  13. 1/2 teaspooncumin powder
  14. Salt to taste
  15. 1/2 teaspoonblack salt
  16. 1/2 teaspoonchili flakes
  17. 1/2small raw mango, chopped
  18. 1small piece ginger
  19. 1/2 teaspoonchaat masala
  20. Tamarind pulp to taste
  21. 1onion, sliced into rounds for garnish
  22. 1 tablespoonchopped cilantro for garnish

    Sift the chickpea flour into a bowl. Add salt, red chili powder, cumin seeds, and chopped onion. Mix well, then add water to make a batter for fritters.

    To make the pani (spiced water), wash the cilantro and add it to a blender jar along with ginger, chopped raw mango, chili flakes, salt, black salt, cumin powder, and chaat masala. Blend into a paste and transfer to a large bowl. Add cold water and ice. Add tamarind pulp as needed to adjust the taste.

    Heat oil in a deep pan. Add a pinch of baking soda to the chickpea batter and mix well.

    Fry small spoonfuls of the batter in the hot oil to make small fritters (fulki). Keep them small in size. Once all the fulki are fried, soak them in water for 5 minutes. Then gently squeeze out the water from each fulki.

    Add the fulki to the prepared spiced water. Top with onion rings and chopped cilantro, and serve chilled.

रसोई एक कला है । एक ही व्यंजन दो अलग बनाए तो दोनों का टेस्ट एक जैसा नहीं आता दोनों के टेस्ट अलग होते है ,रसोई में धैर्य चाहिए जो सब के बस की बात नहीं ।रसोई बनानी सब के लिए आसान नहीं। ।किसी को रसोई बोरिंग लगता है पर मेरे लिए रसोई प्रेम और धैर्य से सिंची हुई कला है। सब के लिए अलग और स्वादिष्ट व्यंजन बनान मुझे बहुत पसंद है।
