Below is the type of Briyani Seasoning we love to use. This particular briyani seasoning by SHAN (pic below) is for 750g basmati rice and it tastes great. We used leftover roasted lamb leg cooked for our Gawai Dayak (Harvest Festival) Midnight Dinner 1st June 2024.

Gather & prep all ingredients:
1. Slice or shred meat
2. Soak Rice. In the meantime, prep the rest. - 3
In a big deep pan, Heat 1 cup of ghee or oil and fry finely sliced onions until translucent. Add meat, minced garlic or paste and stir for a minute. Add a packet of SHAN Memoni Mutton Briyani Mix and continue to cook for another 5-6 minutes. Add 3-4 cups of water, plain yogurt, tomatoes, whole green peppers/chilies & 3-4 tbsp lemon juice. Stir to mix and when it starts to boil, remove from the heat. Leave everything in the pan.

Next, in a separate pot or deep pan, bring 1-2 litre of water to a near boil. Add soaked rice & 3 tablespoons of salt. Cook rice until 1/2 cooked. The instruction from the box stated for 3/4th cooked but this recipe uses 3-4 cups of water added to the meat earlier so we fear that our rice would be too mushy, we adjusted the rice cooking time. Remove & drain thoroughly.

Transfer rice to meat pan, spreading evenly then gently stir (only few times) just to mix everything. Cover and cook on a very low heat for 10-15 minutes or until the rice is fluff and water is gone completely.

Remove the cover, add extra few tablespoons of ghee over the rice (optional). Gently Fluff the rice from bottom to top. Cover and cook for extra 5mins.

Garnish with chopped mint & coriander. Serve with raita, salad or kebab.
