Season your chicjen with all your powders

Chop your onions garlic chilli and brown in a very large pot add the chicken and fresh chunks of ginger and cover with water cook for about an hour and a half adding water when needed add your tomatos rice and and salt stir well then add water tto cover and a chicken stock hand full of corriander seal the top of the pan tightly with kitchen foil when the water has evaporated the rice should be cooked if not add a touch more water this is a dry dish no water should be left

#tip if you have a pressure cooker use this cover with the lid instead of kitchen foil
