Steps
- 1
Preheat oven to 190 degrees.
- 2
Lightly grease baking dish. Set aside.
- 3
In a mixing bowl, mix together milk, eggs, melted coconut oil, vanilla and honey. Set aside.
- 4
Arrange half of the berries (I used frozen blueberries and blackcurrants) on the bottom of the baking dish.
- 5
In a mixing bowl, combine oats, baking powder, cinnamon, nutmeg, salt.
- 6
Top berries with oat mixture.
- 7
Pour milk mixture over the oats.
- 8
Arrange remaining berries (I used fresh raspberries and blackberries) on top.
- 9
Sprinkle silvered almonds over the berries.
- 10
Bake for 40-50 minutes or until the oats have absorbed all the liquid.
- 11
Leave in the oven with the door half open for few minutes.
- 12
Serve immediately while hot. It goes very well with vanilla ice cream on top :) Can be served cold too.
