A bright, colorful and crunchy salad with an Asian-style sesame and soy sauce dressing that packs a lot of flavor! This can be whipped up in about 10 minutes. Use yellow, orange, and white carrots for extra color.

1/2 tspsalt
1/2 tspcayenne pepper or red chili powder
1 tspsoy sauce, more to taste
2 Tbspsesame oil

Slice carrots into thin matchsticks.

Put in a bowl and sprinkle with salt. Massage lightly with your hands.

Add the cayenne pepper, soy sauce and sesame oil to the bowl and mix well until everything is coated in the dressing.
