I substituted the cracker with stovetop stuffing. We used to eat this with crushed butter crackers, like 6 cups full. Wanted to try out stuffing.

I substituted the cracker with stovetop stuffing. We used to eat this with crushed butter crackers, like 6 cups full. Wanted to try out stuffing.

Ingredients

  1. 1 packagestove top stuffing your choice of flavors
  2. 2 cansevaporated milk
  3. 1/2 cupbutter crackers crushed for topping
  4. 1-1/2 cupsdiced onions
  5. 1-1/2 cupsdiced celery
  6. 2/3 cupricotta cheese
  7. 1/2 cupshredded mozzarella cheese for topping
  8. 1 stickbutter
  9. 3 poundsAubergine/eggplants
  10. As neededsalt for bitterness removal

Cooking Instructions

    Dice the onion and celery melt the butter in a pot and add in the celery and onion. Salt the aubergines and allow them to pull the bitter liquid out of them. Drain the aubergines and rinse. Add the aubergines to the celery and onion and simmer for 20 minutes covered. Preheat oven to 400° Fahrenheit.

    Add the milk Parmesan, and ricotta cheese. Mix well and simmer gently.

    When it's really simmering we'll add the stuffing mix. Mix it well enuff that there isn't any dry stuffing mix not wet. Cook 7 minutes. Add the cheese and crushed crackers on top. Put in the oven for 25-30 minutes.
