Carnitas are very famous in Michoacán; they are the best in all of Mexico. Of course, there are different ways to prepare them, with various cuts of meat. This is my husband's recipe—easy, quick, and delicious.

Carnitas are very famous in Michoacán; they are the best in all of Mexico. Of course, there are different ways to prepare them, with various cuts of meat. This is my husband's recipe—easy, quick, and delicious.

Wash the meat (optional). Soak the pork skin in water with a tablespoon of vinegar and a lemon to remove the odor, for half an hour, then rinse well. In a pot or pan, heat the lard, then carefully add the meat and let it sear for 30 minutes.

Add the spices, orange juice with the peels, Coca-Cola, and beer.

Let it cook for 20 minutes, then add the pork skin and immediately add the water. Dissolve the salt in the water. The water helps the pork skin become tender and not tough. Let it cook for about 40 minutes. Remember to check the meat and adjust the salt.

For the salsa, dice the onion, 2 tomatoes, and 3 serrano peppers. In a blender, blend the other 2 tomatoes, a piece of onion, 3 peppers, garlic, salt, and a splash of water. Mix it with the chopped vegetables, and adjust the salt.

For the sautéed onion and peppers, add them 10 minutes before turning off the heat, but this is optional. Let the meat rest, then cut it to make tacos or serve with whatever you like. This recipe is only for 2 1/4 pounds of meat and 1 pound of pork skin. It only takes 2 hours; remember, if you want to make more, it takes more time and double the ingredients!
