Cut the chicken breast into small pieces.

Add all the ingredients to the chicken and mix well until combined.

Add the chicken, onion slices, pickles, tomato, and any other desired fillings, or leave plain if you prefer.

Toast the sandwich in a sandwich press or toaster for 5 minutes and serve hot with fried potatoes and pickles.
