Creamy mushroom chicken breast

Cooking Instructions

Chopped the brocolli and red capsicum

In a medium heat pan, put 1/4 of butter and let it melt then fry the garlic, brocolli and red capsicum.

Add the salt, pepper and dried oregano and cover it with lid until the vegetables are well cooked.

Set aside the vegetable and prepare your chicken breast. Cut a pocket like in the chicken breast and insert the cooked vegetables. Seasoned with salt and pepper.

Fry them in a skillet until each side are golden brown then set aside.

Arrange the cooked chicken breast in a pan while you prepare the sauce.

For the sauce: on the same frying pan, drizzle some olive oil and cook the garlic, add the mushroom and the cooking white cream, add the grated parmesan cheese and seasoned it with salt and pepper.

Put the sauce in chicken and bake it for 15 minutes in 450F. Garnish it with parsley and serve.

You know that cooking hack where you turn a can of Campbell's cream of mushroom soup into a sauce? My mom used it all the time, usually to top steak (which in our house was always cooked to well-done, and really needed a sauce), and occasionally as a braise for chicken or pork chops. Well, this is a homemade version of that hack. It may read as a little fussy, especially with the making of the mushroom stock. Truth be told, I only did that because I had an extra bag of older mushrooms that weren't very appealing anymore but hadn't actually gone bad. I don't know how much they added to the dish, but I know they didn't hurt it. If you don't feel like making your own stock (and really, why would you unless you too had an extra bag of wrinkly 'shrooms lying around?), use store-bought mushroom stock instead. Robert Gonzal -
