Mushrooms are in season at the farms right now, especially these large, organic ones that are quite rare. They have a wonderful aroma like shiitake mushrooms and a meaty texture. This mushroom dish is great for vegetarians or anyone who needs to avoid meat for health reasons, as it's very nutritious.

Soak the mushrooms in cornstarch for 5 minutes to clean them, then rinse and slice each mushroom into 3/4-inch (about 2 cm) thick pieces. Smash the garlic.

Marinate the mushrooms with 1 tablespoon of each seasoning so they absorb the flavors. Heat a pan with oil, sauté the garlic until fragrant, then add the mushrooms. Sauté both sides until the mushrooms release their juices. Adjust seasoning to taste, then turn off the heat.

Arrange the mushrooms on a baking tray and bake for about 10 minutes. Mix a little cornstarch into the mushroom juices to thicken, then pour over the mushrooms when serving.

These mushrooms are delicious served with congee or salad.
