Quick, easy, and a great bit of quick protein.

Note you can also substitute the ham for bacon and Mozzarella cheese for Cheddar. I would just suggest cooking the bacon prior to adding to the muffin tins.

    Butter/Spray Muffin tins and preheat oven to 375

  2. 2

    Add sliced ham to each cup (or previously cooked bacon)

  3. 3

    Add a pinch of your choice of cheese and crack an egg into each cup on top

  4. 4

    Sprinkle with salt & pepper and cook for 15-18mins depending on how you want your egg done.

  5. 5

    Top with green onion, avocado, or dip in salsa, these are great for fast morning or on the go!
