Vada with high protein, nutrition rich lentils/ daals

Being a Nutritionist, I am always trying out recipes which have a good amount of protein and suggest them to my clients too!
This high protein recipe is sure to take your protein intake to another level and build your immunity.
Also this matches with the first letter of my name too. My name is Vaishali and my recipe name is Vada. This is my favourite recipe from southern cuisine which is a favourite with the world too😋 Vada is also known as Meduvada/Daal Vada/ Uddin Vada/Sambhar Vad/Vade/Uddin Bonde etc. It is a recipe made with High Protein lentils including mung daal, urad daal and rice. First, wash the lentils and rice 3 to 4 times. Then soak in a deep bowl in 3 cups of water for 4 hours.

Then drain the water in another pot. Grind the mixture in batches in stone or electric grinder using very little water. Grind for 15 to 20 minutes till creamy and airy.
✅Important Tip:-
Drop a small amount in a bowl full of water. If the mixture floats on water, it's ready for frying. - 3
Then transfer to a wide bowl. Whisk it with palms for 10 minutes till creamy and fluffy. Then mix the ingredients mentioned except oil and combine again.

Then heat oil in a kadhai at medium temperature. Wet your fingers with water and scoop out lemon sized portions. Make a small hole in the center with your thumb and drop carefully in hot oil. Fry on both sides till golden and remove on a kitchen paper.

After frying all the vadas this way, increase the heat and refry all the vadas in batches on high heat till crispy. Remove in separate kitchen towel to absorb excess oil.

Serve hot with chutney and sambhar or only chutney and enjoy! 👍🏻
Tip: If your batter becomes runny or loose in consistency, add 1 to 2 tablespoons of rice flour, whisk well to make it suitable for dropping in oil shaped in round doughnuts.
