Rocket tofu curry
Easy weeknight curry.
Steps

Chop the onion, and put it in a large saucepan with enough water to cover. Add the garlic, ginger and turmeric and stir well. Allow to cook for a few minutes until the onion softens.

Meanwhile, cut the tofu into 1-2cm pieces and prepare the vegetables. Add the tofu, vegetables and nuts into the pan and stir well. You may wish to add a little more water at this stage but don't overdo it!

After a few minutes - once the vegetables are cooked through and softened - stir in the rocket.

Once the rocket has wilted, the curry may want thickening. Put a little water in a cup and stir in 1 tsp cornflour to make a smooth paste - pour this into the saucepan and stir. As it cooks cooks, the gravy should thicken.
