Ingredients

2 people
  • 1onion
  • 1 tspminced garlic
  • 1 tspminced ginger
  • 2 tspturmeric - or use any mild curry powder
  • 1 blockvery firm tofu (usually about 300g)
  • Vegetables - the recipe pictures includes one chopped red pepper and a double-handful of frozen sweetcorn. (You may want to pre-cook vegetables if they need more than a few minutes of cooking.)
  • Small handful of dessicated coconut
  • Small handful of ground almonds
  • 60 gwild rocket
  • Cornflour, to thicken if needed

Steps

  1. 1

    Chop the onion, and put it in a large saucepan with enough water to cover. Add the garlic, ginger and turmeric and stir well. Allow to cook for a few minutes until the onion softens.

    Meanwhile, cut the tofu into 1-2cm pieces and prepare the vegetables. Add the tofu, vegetables and nuts into the pan and stir well. You may wish to add a little more water at this stage but don't overdo it!

  3. 3

    After a few minutes - once the vegetables are cooked through and softened - stir in the rocket.

  4. 4

    Once the rocket has wilted, the curry may want thickening. Put a little water in a cup and stir in 1 tsp cornflour to make a smooth paste - pour this into the saucepan and stir. As it cooks cooks, the gravy should thicken.
