Prepare the ingredients. Remove the skin from the chicken and cut into bite-sized pieces. Preheat the oven to 430°F (220°C).

Place the cut chicken, salt, pepper, olive oil, oregano, and lemon juice in a zip-top bag. Mix well and let marinate in the refrigerator.

Meanwhile, prepare the tzatziki. Strain the yogurt in the refrigerator overnight to remove excess liquid.

Grate the cucumber, sprinkle with a pinch of salt, and let sit. Then squeeze out as much water as possible from the cucumber.

Finely chop the garlic.

Add the cucumber (from step 4), garlic (from step 5), salt, pepper, olive oil, and wine vinegar to the strained yogurt.

Mix well, then refrigerate until ready to serve.

Cut the bell pepper and onion into bite-sized pieces. Thread the prepared ingredients onto skewers and place them on a baking tray.

Bake in the oven for about 30 minutes, turning the skewers occasionally until cooked through.
