Today, my mother-in-law, whom I love like my own mother, was not feeling well, so I wanted to prepare something light, comforting, and nourishing for her. While cooking this Dudhi ni Kadhi, I remembered my late mother, who always believed that food made with love has the power to heal.
This simple sattvic meal is dedicated to both my mothers — one who taught me the warmth of traditional cooking and one whom I now care for with the same love and respect. Since my mother-in-law does not prefer coriander, I made it just the way she likes. Soft, soothing, and filled with homemade comfort, this meal truly came straight from the heart ❤️

Wash, peel, and cut the bottle gourd into equal-sized cubes. Keep them soaked in water.

Boil water in a pot and cook the bottle gourd cubes until they are about 75% done.

Meanwhile, whisk together curd and gram flour until smooth. Add water or buttermilk to adjust the consistency.

Add turmeric, salt, sugar, and crushed ginger-chili paste to the kadhi mixture and cook on a low flame.

Drain the partially cooked bottle gourd cubes.

Heat ghee in a pan and prepare the tempering with fenugreek seeds, cumin seeds, cinnamon, hing, and curry leaves.

Add the boiled bottle gourd cubes to the tempering and saute for 5 minutes so the flavors blend well.

Transfer the sauteed bottle gourd into the simmering kadhi mixture and let it boil together for a few minutes.
Turn off the heat and serve warm. - 10
Serving Suggestion :
I served this warm Dudhi ni Kadhi with simple moong dal khichdi and potato sabji for my mother-in-law. It also pairs beautifully with bajra rotla or soft phulkas.
