Pick through the lentils and rinse them well along with the rice. Peel and finely chop the onion. Wash and finely chop the parsley.

In a pot, combine the lentils, rice, and water. Bring to a boil, then skim off any foam from the surface. Add the salt and cumin, then reduce the heat and simmer until the ingredients are tender.

Meanwhile, sauté the onion in the vegetable oil until golden. Once the soup ingredients are cooked, add the sautéed onion to the pot. Let it simmer together for 5 minutes, then add the parsley and cook for another 2 minutes. Turn off the heat—the soup is ready.

Serve hot or cold, as you prefer. Enjoy!
