With a slice of vegetarian Vietnamese sausage combined with fresh vegetables, this light and healthy vegetable soup is completely free of fat.

Peel, wash, and cut the vegetables into bite-sized pieces. Bring a pot of water to a boil and add the enoki mushrooms, then add the carrot, potatoes, and chayote squash.

Season to taste, then add the broccoli and green beans. Let them boil for a few minutes, then add the cabbage. Slice the vegetarian sausage and stir it into the soup.

When the vegetables are tender, thinly slice the tofu and add it at the end. Sprinkle black pepper on top before serving. Enjoy this delicious vegetarian vegetable soup!
