In a mixing bowl, combine the rice flour, all-purpose flour, salt, sugar, and baking powder.

Finely chop 300 grams of pineapple and blend to extract the juice. If you don’t have enough, add more pineapple to make 300 grams (about 1 1/4 cups) of juice.

Add the pineapple juice to the flour mixture and stir until smooth. Strain the batter to remove any lumps. Bring water to a boil in a steamer. Grease the molds and preheat them in the steamer. Pour the batter into the hot molds, filling them to the top. Steam over high heat. The cakes will gradually rise; steam for about 15 to 20 minutes. Check doneness by inserting a toothpick—if it comes out clean, the cakes are done. Remove from the steamer, let cool, and take the cakes out of the molds.
