Ingredients

6 hours
Serves 5–6 servings
  • 4 1/2–5 1/2 lbs leg of lamb (2–2.5 kg)
  • 2 cupswater (about 475 ml), or more as needed
  • 8potatoes, cut into wedges
  • Lemon juice
  • Olive oil
  • 1 headgarlic for the lamb, plus 2–3 cloves garlic for the potatoes
  • Salt
  • Pepper
  • 2 tablespoonsdried oregano (about 6 grams)
  • 2 tablespoonsdried or fresh mint (about 6 grams)
  • 1 tablespoonpaprika (about 7 grams)

  1. 1

    Remove the leg of lamb from the refrigerator and let it come to room temperature for about 1 hour. Meanwhile, prepare the other ingredients.

    Rub the lamb with olive oil. Make several slits on both sides and insert peeled garlic cloves into the slits. Season generously with salt, pepper, and the remaining spices on both sides.

    Place the leg of lamb on a rack set over a roasting pan, so it sits just a few inches above the pan.

    Pour water into the roasting pan. Roast in the oven at 325°F (160°C), covered with a roasting pan lid or aluminum foil (make sure the foil does not touch the lamb), for 6 hours. Check regularly to make sure there is always water in the pan.

  5. 5

    Season the potatoes with salt, pepper, 2–3 garlic cloves, paprika, a little more salt, olive oil, and lemon juice on both sides. Set aside. Add the potatoes to the pan one hour before the lamb is done (at the 5-hour mark), keeping the lid or foil on.

    Once cooked, let the lamb rest for 15–20 minutes.

    Slice and serve with the potatoes and a Greek salad. Enjoy!
