Steps
- 1
Prepare a checklist. kaap all ingredients within reach
Preheat the oven 180c
The suash has a hard rind, I microwace it at high sting for 10 minutes. Cut into half. Using a fork scrap out the sphagetti strings, set aside in a bowl
Do not discard the shell. - 2
Sauté onions in 2tbsp olive oil in a skillet over medium heat cook until translucent. Add red chilli flakes. Add mushrooms. Cook until the liquid from mushroom goes away.
Transfer to a plate; and cool to room temperature. - 3
Layering in the baking dish
I used a baking tray 9 inch x 9 inch x 4inch
1st group Build the Layers

Layer3: 1c stir fried mushrooms
Sprinkle 1c cheddar cheese
Layer4: 2c tomato basil sauce
Layer5 2c squash srings
Layer5: ½ c ricotta cheese, spoon out here and there
Layer6: 1c roasted bellpeppers
Sprinkle 1 c Parmesan cheese
Sprinkle Italian spice mix - 4
Group 2 repeat group 1
Top with a layer of 2c tomato basil sauce
Sprinkle red chili flakes
Arrange basil in a single layer
Top with left over cheese on the top
Top with olives - 5
Bake, covered with aluminum foil for 15 minutes, then remove the foil and bake for another 10 minutes. The whole house gets filled with aroma
Let the baked lasagna rest before cutting into it. Doing so helps it firm up and hold its shape when you cut into it to serve. Plus, it gives it a chance to cool down enough to enjoy
Serve the lasagna on a serving plate. You may also use the squash shell for serving
