I did not follow a Recipe . Did look through my CookPad App too give myself a idea how too make my homemade Shortcrust Pastry - did blind bake - allowed the cooked Pastry Case to cool down and then I used my knowledge that I have learned from watching TV Cookery Shows too use a very low oven Gas Mark too cook the raw savoury custard and the crumbled cheese underneath . Feed's 2 people , because I made 2 large Quiche's One White Cheshire Cheese One and One Lancashire Cheese One

Too make the homemade savoury raw Pastry I used my Kenwood Food Mixer with the Kenwood Dough Hook Attachment, but is possible too do it by hand - rubbing dice's of butter in with the Plain Flour too make a fine breadcrumb texture and then just add enough of cold water too form a ball - will need too knead the raw Pastry Dough so butter is well worked into the Plain Flour - rest - wrapped in Clingfilm and allow too rest in the Fridge for 8 hours

Preheat the oven to Gas Mark 6.
Take the Clingfilm off of the raw Pastry ball and then with a sharp Kitchen knife - cut in half and then place the One half between 2 identical pieces of Baking Parchment Paper and then roll flat with a Wooden Rolling Pin. Take the top piece of Baking Parchment Paper off,but leave the other piece of Baking Parchment Paper on - 3
Cut a round overlap using the solid metal Cake Tin that you are using as a guide and then work the flattened Pastry disc with the Baking Parchment Paper underneath - into the shallow Cake Tin and then use a leftover bit of raw Pastry ball too work the flattened Pastry disc into the Baking Tin and then use a Dinner Fork too pierce lots of holes in the bottom and then place a piece of Baking Parchment Paper over the top and then weigh down the Pastry with Ceramic Baking Beans

Bake blind at Gas Mark 6 for 20 minutes and then remove from the oven too remove the Ceramic Baking Beans and the Baking Parchment Paper and then cook the Pastry Case for a further 10 minutes and then remove from the oven and then allow to get cold. No need too remove the over lapped cooked Pastry

Crumble with your Hands the 250g of White Cheshire Cheese into the cold cooked Pastry Case and then in a large metal Mixing Bowl crack 5 Hen eggs and then beat them with a Dinner Fork etc. and then add the 300ml of Double Cream whether Liquid or a thickened tub of Double Cream - stir - with a Dessert Spoon and then add the eggy cream over the crumbled cheese within the cooked Pastry Case. Bake in the oven at Gas Mark 2 for 2 hours
