In Japan where I grew up, no one had oven at home when I was a child. My mother made biscuits by frying in the oil. The ingredients were Egg, Sugar and Flour. She never used Butter. Oven baked biscuits in various shapes were available from sweet shops, but the ingredients were the same. These dry biscuits make me feel nostalgic.

Ingredients

30 minutes
4 Servings
  • 1large Egg
  • 1/3 cupCaster Sugar
  • 1 pinch(OR 1/8 teaspoon) Salt
  • 2 tablespoonsOil *I use Sunflower Oil
  • 1 cup (250 ml)Plain Flour

Steps

30 minutes

    Preheat oven to 160℃.

  2. 2

    Place Egg, Sugar, Salt and Oil in a mixing bowl, and mix well. Add Flour and mix to combine. The dough should be firm and not sticky. Add extra Flour if required.

    Prepare a sheet of baking paper that can fit in a baking tray. Place the dough on the baking paper, lightly sprinkle with Flour, and roll out into a large oblong OR rectangle, about 3mm thin. Make cuts using a knife OR pizza cutter, so that it would be easy to break the baked biscuits into 4-5cm squares.

    Place on a baking tray, and bake for 25 to 30 minutes OR until nicely browned.

    Cool slightly. When it is cooled enough to touch, break into squares, and return them into the oven that should be still hot. Leave them in the remaining heat in the oven for 10 minutes. Biscuits turn crunchy when cooled completely.
