Ingredients

  1. 10 ozcan chicken in water
  2. 1egg
  3. 1/2 cupgrated Parmesan
  4. 1/2 tspItalian seasoning
  5. 1/8 tspground red pepper

Cooking Instructions

    Drain chicken and spread flat on parchment paper on baking sheet. Break the chicken up with a fork. Bake in 350 degree oven for 10 mins.

    While chicken cooks, whisk egg in medium mixing bowl. Add Parmesan, red pepper and Italian seasoning. Stir until blended. When chicken is done, add to mixing bowl and mix completely.

    Lay out fresh sheet of parchment paper, and pour chicken mixture on it. It will be crumbly. Cover with sheet of wax paper and press flat with hands or rolling pin until very thin. Shape into rectangle and place on baking sheet. Bake in 500 degree oven for 8-9 minutes.

    Add toppings as desired. I mix 1/2 cup Raos marinara with 2 tsp Presto basil pesto (nut free) and spread on crust. I add 1 slice chopped prosciutto, spinach leaves, shredded mozzarella cheese, and black olives, but pick your favorites.

    Bake in 400 degree oven for 10 mins. I put mine under the broiler for 2 minutes because I like it browned and crispy, but this is to taste. Remove from oven, cut, and enjoy!
