Cut brinjal in a cross.. heat oil in a kadai add brinjal and fry it...

When it is fried well, take it out and leave it to cool, add some oil in the same pan, when it is hot, add chilli and fry it well, add mint leaves to the same oil, when it is fried well, cool it and grind it.

Once the eggplant cools down, remove the skin and mash it with your hands.

Heat oil in a pan and fry it with mustard and add chopped onion and curry leaves.. When the onion is fried well add ground chilli mint, tamarind and brinjal...

Add water as per requirement and let it boil well.. Add required amount of salt and asafoetida to it and let it boil till it becomes thick..

Now egg plant and mint kochu is ready...
