Steps

Select small seedless brinjals. Cut the ends and make cross cuts on it. Also roughly cut onion, tomatoes, chilies, ginger and garlic.

Merinate brinjals with some turmeric powder and salt.Keep aside for a while.Make a paste of tomatoes, onion, garlic, ginger and chillies in a mixie. Add all the spices to curds and mix well.

Take oil in a pan and shallow fry the brinjals. Keep aside.

In the same oil add jeera, dry red chilli,bay leaf and kasuri methi. If there is more oil, take it out

After oil releases, add the curds with masala. Stir it till oil releases. Add the fried brinjals to it.

Cover the pan for few minutes and let it cook. The gravy will merge with the brinjals. Enjoy this recipe with Rotis, parathas or rice.
