Honey cakes are a classic favorite in my country and have always been my go-to treat. Here’s a simple way to make them.
They’re delicious, made with easy-to-find ingredients, and healthy for the whole family. Perfect for a snack made with love.

In a bowl, mix the molasses with the egg. Add the vanilla extract, mix again, and finally add the water.

Add the rice flour and baking soda, and combine everything. The batter should not be too thick.

Optional: Add 1 tablespoon cornstarch. I always do this, especially if the batter is very runny, but you can make it just with the rice flour.

Pour the batter into your preferred baking pan and bake at 350°F (180°C) for 20 to 25 minutes.
I use a silicone mold for individual portions, but you can also use a loaf pan. Don’t forget to grease the pan if it’s not silicone.

Once baked, remove from the pan and drizzle a little molasses on top. I also like to add shredded coconut.
