Sift the dry ingredients: flour, salt, baking soda, sugar, cinnamon, and baking powder.

Add the eggs, oil, and vanilla extract to the mixture. Mix for 2 minutes or until well combined.

Gently fold in the grated carrot, walnuts, raisins, and coconut.

Pour the batter into a pan greased with butter.

Bake for 30 to 40 minutes at 350°F (180°C) after preheating the oven for 10 minutes at 400°F (200°C).

After 30 minutes, insert a toothpick into the center of the cake. If it comes out clean, the cake is ready.

Remove from the oven and take out of the pan. It's ready to enjoy. You can add frosting or whipped cream if you like.
