Boil Soya Chunks in 1.5 cups water adding 1/4 tsp salt for 5 minutes till soft. Strain, cool and sqeeze out all water from soya chunks. Reserve stock for using in curry. Cut cauliflower into medium size florets.Peel and cut potatoes into cubes.Wash both the vegetables and drain water.Heat 1 tbsp oil and pan fry soya chunks with little salt.Fry till they are brown.Set aside.

Heat 2 tbsp oil in the same pan.Fry the cubed potatoes in low to medium flame till partially cooked.Set aside.Smear salt and fry the cauliflower florets till golden brown in low to medium heat.In the same pan add 1 tbsp more oil.Sprinkle half crushed whole garam.masala, black pepper and cumin seeds.Saute till they sizzle.Add chopped onion and fry till translucent.

Add ginger garlic paste, turmeric,Kashmiri Red Chilli Powder, cumin powder, salt and sugar to taste.Add tomato puree or 1 finely chopped tomato.Fry till oil leaves sides.Add green peas, cauliflower, potatoes and soya chunks and mix all.Add the reserved stock and 1/2 cup more water.Cook for 5 minutes till gravy thickens and vegetables are perfectly cooked.

Sprinkle kasoori methi and mix. Drizzle 1 tsp ghee.Give it a boil and switch off the stove.Cover and give it a standing time for 5 minutes before serving. Garnish with chopped coriander and serve hot as a side with steamed rice and dal or with roti or paratha.
