10 1/2 ozbutternut squash (about 300 grams)
1 Italian sausage
1 garlic clove
Extra virgin olive oil and rosemary, as needed

Peel the butternut squash and cut it into small cubes. Place it in a skillet with a drizzle of extra virgin olive oil, the garlic clove, and finely chopped rosemary.

Lightly salt and cook over very low heat with a lid on.

Remove the casing from the sausage and crumble it, then add it to the squash.

Meanwhile, toast the slices of rustic bread.

Once the sausage is cooked and the squash is tender, turn off the heat and top the toasted bread with the squash and sausage mixture.
