Ingredients

Prep half hour, fry 15 minutes
4 people
  1. 1 poundred snapper filet, cut in 1” chunks
  2. 1 Tbsrock salt to extract fish juices
  3. Herb mix, 1/4 Tsp each: sweet paprika, nutmeg, ginger, turmeric, garlic, crushed laurel leaf, celery seeds, black mustard seeds
  4. 1 cupoats flour
  5. 1/2 cupmilk
  6. 1/2 cupapple cider
  7. 1fresh farm egg
  8. Quartpeanut oil
  9. 1fresh lemon
  10. 2 poundsfrench fry cut fresh russet potatoes to fry in hot peanut oil
  11. Equipment: glass bowl, plastic bag, french fry cutter, deep fat fryer, filter for oil reuse
  12. Cost: red snapper $7, potatoes, egg, flour, other $3, per dinner $2.50

Cooking Instructions

Prep half hour, fry 15 minutes

    Spice fish chunks: extract fish juices from red snapper chucks on bed of rock salt, 15 minutes. Wipe dry. Shake chunks in plastic bag with herbs till coated on all sides.

    Make batter: whip egg with milk and apple cider, stir in oats flour till thick like pancake batter. Rest 15 minutes. Dip fish chunks in batter. Let batter coat red snapper chunks.

    Cut and soak french fries in water and dry in kitchen towel if you want light colored french fries. Prefry french fries in 350F oil till golden, four minutes, lift out of oil, turn heat up to 375F, finish frying till crisp, about three minutes, drain. Salt with flaked seasalt. Cool and filter oil for reuse.

    Deepfry battered fish chunks in 350F degree peanut oil, put on plate. Drizzle fresh lemon juice over fish. Serve red snapper and french fries with dip like ranch dressing. Enjoy.
