  1. 1/2 cuponion (about 80g)
  2. 7 ozboneless chicken thighs (about 200g)
  3. Sauce
  4. 3 teaspoonsunsweetened peanut butter
  5. 3 tablespoonshot water
  6. 1 1/2 teaspoonssoy sauce
  7. 1little lemon juice or calamansi juice

    Finely chop the onion and cut the calamansi in half to remove the seeds (I used 1.5 pieces, but you can also use lemon juice).

    Mix the 'Sauce' ingredients until smooth.

    Without adding oil, place the chicken thighs skin-side down and cook over medium-low heat until the skin is browned.

    Add the onion and sauté until fragrant, then flip the chicken thighs and add 1 tablespoon of water.
