Wash and trim the cauliflower into florets with the tender stalks. It doesn't matter if the length of each stalk is not the same. Just trim whatever is tender and leave the rest of the stalk. Or you can just have the florets alone. It's absolutely one's own choice here. Fry them for a crisp crust and texture. However it's optional. Marinate it with little salt and pepper for 5 minutes.

Now for the making of the recipe or the dish, heat oil and ghee both together. Add cumin seeds followed by onions. Cook until done. Add the red chilli, turmeric, coriander and garam masala powders. Now add the cauliflower with stalks and florets. Let it cook for a while on a low heat.

In the meantime make a smooth paste of cashewnuts and poppy seeds both with about 3-4 tablespoons of thick homemade curd. Add it to the kadai. Mix well. Adjust salt and other spices if required. Cover and cook on a medium high to high heat until it's done.

Roast it to perfection as this is a thick gravy based dish perfectly in tandem with some homemade fresh rotis and parathas. Garnish with lots of chopped coriander greens. Enjoy!
