Family recipes are the best! My Aunt always made red velvet layered cake for Thanksgiving and Christmas. She decided it was time to “pass the spatula” to the next generation. This is the tenth year of the nieces and great nieces getting together to “learn” the recipe. Hilarity reins. #GlobalApron 2024
Red Velvet Mini Cupcakes

Preheat oven to 350*. Sift flour, soda and salt EIGHT (8) times; set aside.

Cream sugar and oil; add eggs, beat well.
Mix food coloring and cocoa, then add vinegar and mix well, add to sugar mixture. Beat hard. - 3
Add buttermilk and flour alternately to mixture, add vanilla, beat until well blended.

Line mini cupcake pans with paper liners. Fill liners half full. Bake 17-20 minutes, depending on how your oven cooks. Remove from oven and let cool completely before frosting.

Cream Cheese Frosting

Cream butter and cream cheese together until fluffy. Add sifted powdered sugar, blend until smooth. Add vanilla. Stir in pecans. Frost cool cupcakes.
