Veggie or meat and veggie bowls are one of my favorite dishes to make with leftover pasta or rice. Here's one that takes a short amount of time and us healthy and filling.

Ingredients

1 serving
  1. 1 cupLeftover rice or pasta
  2. 1 cupFrozen edamame
  3. 1/2 cupShredded carrots
  4. 5-7frozen brussel sprouts
  5. 1 handfulpeanuts
  6. Sesame seeds to taste
  7. Soy sauce to taste
  8. Chili sauce or chili flakes to taste

Cooking Instructions

10-15 min
  1. 1

    Place carrots, brussel sprouts and soybeans with a few tablespoons of water in a microwave safe bowl. Cover and microwave for 1.5 to 2 minutes. Drain.

    In another bowl, place veggies on top of leftover pasta or rice. Warm again if not warm enough.

  3. 3

    Top with soy sauce, sesame seeds and peanuts. Add chili sauce or flakes if desired & serve.
