I wanted something easy and fast and also wanted to use up some leftover shrimp and veggies so I made this Low Carb skillet dish.

I wanted something easy and fast and also wanted to use up some leftover shrimp and veggies so I made this Low Carb skillet dish.

In a large skillet add butter and oil. Heat on medium high add vegetables and sauté til veggies are almost tender then add the shrimp and seasonings. Stir and sauté til everything is seasoned and shrimp is heated through. Turn off heat and top with cheese. Cover pan and let set til cheese is melted. Serve immediately and enjoy 😊.
***Optional top with Salsa, Sour Cream, and Guacamole if desired. ***And for a Carb option serve with Flour Tortillas.
