Ingredients

  1. 2 cupsbottle gourd – grated
  2. 4 tablespoonsgram flour (besan
  3. 1/4 teaspoonred chili powder
  4. 1/2 teaspoonsalt
  5. 1/4 litreoil for frying kofta
  6. 2tomatoes – large-sized, roughly chopped
  7. 1onion, – medium-sized, roughly chopped
  8. 1 teaspoonginger – chopped or 1 inch peeled ginger
  9. 4-5garlic cloves, – small to medium-sized, roughly chopped
  10. 1 teaspooncumin seeds
  11. 1/4-1/2 teaspoonred chili powder
  12. 1/4 teaspoonturmeric powder (ground turmeric)
  13. 1/4-1/2 teaspoonGaram Masala
  14. 1 cupwater or add as required
  15. 2 tablespoonsoil
  16. 1 tspsalt
  17. 1/2 teaspoonsugar or add as required, optional
  18. 1bayleaf
  19. 1/4 cupcoriander leaves chopped

    Rinse and peel the lauki (bottle gourd). Grate it.

    Mix all the ingredients, except oil, for making the koftas with the grated lauki.

    Make small round shaped balls or patties.

    Heat oil in a kadai or frying pan. Fry the lauki koftas in oil, till they are evenly golden browned from all sides.

    Keep aside.

    Blend all the ingredients mentioned under 'for making masala paste' without water to a smooth and fine paste.

    Heat the oil and fry the cumin seeds and bayleaf first on low heat until they splutter. Then, add the ground masala paste.

    Sauté for 8 to 10 minutes on medium-low heat stirring often. Then add all the ground spice powders.

    Stir and continue to sauté the masala paste till it starts leaving oil from the sides. The masala will also thicken and look glossy

    Add about 1 cup water or as needed to the sautéed masala paste. 

    Stir and simmer for 5 mins than add koftas simmer for 5 mins until the curry thickens a bit.

    Switch off the heat and let the koftas be in the gravy for a few minutes.

    Garnish with coriander leaves and serve Lauki Kofta hot with roti, naan or jeera rice
