Ingredients used:
Lauki (Bottle Gourd)

Steps

Take a medium sized lauki(bottle gourd), dice it into small pieces and keep aside.

Now take quinoa in a bowl.Wash it and soak it with 1 cup water for 10 minutes.

Now heat oil in a pan.

Once hot add the cumin seeds.

Once it splutters,add the crushed garlic.

Now add the lauki(bottle gourd) to the pan

Add the turmeric and salt and mix well.Cover and cook for 10 minutes.

After 10 minutes open the lid and red chilli powder and mix well.

Now add the chopped tomatoes.

Now drain out the water from the soaked quinoa and add the drained quinoa to the pan and mix well.

Now add 3/4 cup water, cover with a lid and cook till the lauki (bottle gourd) and quinoa becomes soft.

Remove from the stove and garnish with chopped coriander leaves.

Serve hot.
