Steps

Preheat oven to 425F. Rinse and dry potatoes, then slice them in half.

Drizzle the bottom of a glass 9x13 or similarly sized baking dish with olive oil and tilt the pan to coat the entire bottom of the pan. I like using a garlic infused olive oil, but any olive oil will do!

Mix together seasonings and parmesan in a small bowl. Sprinkle in an even layer over the bottom of the pan. Be sure to sprinkle evenly, and do not stir or mix the contents of the pan once seasonings and cheese are added.

Carefully place potatoes, cut side down into the pan. Do not move the potatoes once placed. Repeat until pan is covered or you run out of potatoes.

Spray or brush the tops of the potatoes with a bit more olive oil. If using a brush, take care not to move the potatoes around in the pan.

Bake for 35-45 minutes or until potatoes are cooked through and crispy on the bottom. The bottom of your pan will be dark brown, and the top of the potatoes will be a bit wrinkly.

Let cool 10-15 minutes and serve!
