Ingredients

40 minutes

  1. 1 cupactive sourdough starter (175g)
  2. 1 1/2 cuproom temp water (300g)
  3. 3 cupsbread flour (450g)
  4. 2 tspsalt (10g)

Steps

40 minutes
  1. 1

    Mix water, starter, flour, and salt together until well combined.

  2. 2

    Cover with towel or plastic cover for 1hour.

    Perform stretch and folds every 30 minutes until dough is jiggly, not sticky, and is holding its shape.

  4. 4

    Take dough out of the bowl and shape into a rectangle. Roll the dough down and then fold until a ball. Use the candy cane method to shape dough.

  5. 5

    Place upside down into a floured bowl and cover with plastic wrap.

    Place in fridge overnight.

  7. 7

    Take dough out of fridge 1-2 hours before baking.

    Preheat oven to 475 with Dutch oven inside.

  9. 9

    Score dough and place dough and parchment paper into Dutch oven.

    Bake at 475 for 25 minutes with the lid on.

  11. 11

    Remove lid and reduce temperature to 450. Bake for 15 minutes.

  12. 12

    Remove bread from oven. Let sit on a drying rack for at least an hour before cutting.
