Bajri - Methi theplas are a winter speciality. It can be served as a healthy breakfast or at lunch or at tea - times or even as a light dinner . These theplas stay good for 3 days . Just serve them with a dollop of home - made white butter & you are good to go .
Here I have used home - made white butter with 1 week old fresh malai .

Steps

Assemble all the ingredients. Take methi in a bowl, add salt & mix. Rest for 10 minutes & then squeeze out all the water.

Take squeezed methi in a bowl / plate. Add the 3 flours, dry spices, green chilli - ginger - green garlic paste & salt. Rub White Butter with your finger tips in the mixture.

Add water slowly to make a semi - soft dough. Cover & rest the dough for 10 minutes.

Knead the dough. Make equal portions from it.Now roll medium size triangle 📐 thepla from one portion.

Cook the thepla on both the sides with little oil, till brown spots appear on them. Make another thepla the same way.

Cool theplas. Apply chilled White Butter on them. Serve the theplas with a dollop of white butter at the side.

Note : As this is a winter special recipe, it is advisable to use white butter, methi & fresh green garlic as much as possible.

Note : You can bind the dough with little sour curds, if you want to take them while travelling. Using curds, they will stay fresh for a week.
