Ingredients

Serves 1 serving
  1. 1/8 headgreen cabbage
  2. 1 bowlnapa cabbage kimchi
  3. 1 stalkgreen garlic (or substitute with green onion)
  4. 1 teaspoontoasted sesame oil
  5. 2pork meatballs
  6. 2egg dumplings
  7. 1 1/4 cupswater (about 300 grams)
  8. Seasonings
  9. 1 teaspoonmirin
  10. 1/4 teaspoonsalt

Steps

  1. 1

    Prepare the ingredients. The stars of this hot pot are vegetables—green cabbage, kimchi, and green garlic. Use any leftover vegetables you have in your fridge.

    Prep the vegetables. Tear the cabbage into pieces; slice the green garlic on a diagonal.

    Sauté. Even though this is a hot pot, start by heating sesame oil in the pot and sautéing the kimchi until fragrant, then add the cabbage.

    Simmer. Add the water and bring to a gentle boil. Add your favorite toppings.

    Season. Add salt and mirin to taste. Since the kimchi brine is already seasoned, be sure to taste and adjust the saltiness as needed.

    Top with green garlic.
