Not Basic Fries

Crispy on the outside, fluffy inside, and tossed in a spicy (mostly delicious) seasoning that keeps you reaching for “just one more.” I double fried these for a crunchy golden crust and soft center because once simply wasn’t enough. It was well worth every minute of waiting between fries 😉

Crispy on the outside, fluffy inside, and tossed in a spicy (mostly delicious) seasoning that keeps you reaching for “just one more.” I double fried these for a crunchy golden crust and soft center because once simply wasn’t enough. It was well worth every minute of waiting between fries 😉
Steps

Peel potatoes, cut into chips, and rinse with water
- 2
Transfer potatoes into a pot and add enough water to cover them. Season with salt and boil for 5 minutes (nothing more)

Drain parboiled potatoes and transfer onto a tray. Pat completely dry with a paper towel
- 4
Heat (medium-low heat) oil in a shallow pan for deep frying. Fry chips for 5 minutes the first time, scoop out of the oil and let rest for 10 minutes. Increase heat to medium-high and refry chips for 10-12 minutes

Drain chips on paper towels, toss in the seasoning and serve
