Ingredients

4 servings
  • 6 cupspenne pasta
  • Salt, to taste
  • 6 Tablespoonsolive oil
  • 1onion, chopped
  • 6 cupschopped tomatoes OR 2 (28oz.) cans diced tomatoes
  • 1 teaspoonhoney
  • 1green bell pepper, chopped
  • 1 teaspoonchili flakes
  • 4 clovesgarlic, minced
  • 1 Tablespoondry basil, rubbed
  • Black pepper, to taste
  • Grated Parmesan cheese and fresh basil (garnish)

Steps

  1. 1

    Boil pasta in a large pot. Drain and set aside.

  2. 2

    In a large saucepan, cook onions in olive oil on medium-high heat until translucent.

  3. 3

    Add tomatoes, salt, and honey - cook until mixture thickens.

  4. 4

    In a small saucepan, cook bell peppers in olive oil until tender.

  5. 5

    Add chili flakes and garlic to sauce along with basil and black pepper. Mix well.

  6. 6

    Toss pasta in sauce and serve with grated Parmesan and fresh basil on top.
