Ingredients

1-3 servings
  • 2 cups (250 ml)cooked pumpkin NB! make sure it is not soggy, add less water when cooking
  • 1large egg
  • 1/2Powdered cheese or Parmesan
  • Salt and pepper to season
  • 2tsb cooking oil (for cooking)

Steps

  1. 1

    Cook pumpkin, and mash it. Ensure that its not watery and you give it time to completely cool down

  2. 2

    Add powdered cheese and mix

  3. 3

    Add half of beaten egg, mix them add the rest of egg till smooth but not runny like normal pancake batter.

  4. 4

    Heat a pan add cooking oil, add the pancake mixture 2 tablespoons at a time, after 4 min flip onto other side till set.

  5. 5

    Plate your pancakes and enjoy with any sides you wish. Enjoy
