Ingredients

  • 1.1 lbspork tenderloin (500 g)
  • 1red onion
  • 2 clovesgarlic
    Comment rendre l ail plus digeste
  • 2 cupschopped tomatoes (about 300 g, fresh or frozen)
  • 1green bell pepper
  • 1 cupchopped red bell pepper (about 150 g, fresh or frozen)
  • 5 sprigsdried thyme
  • 6bay leaves
    Comment avoir du laurier du jardin toute l année
  • 9black figs (fresh or frozen)
    Comment congeler les figues du jardin
  • 1 cupred wine (1/4 liter)
  • 2 cupspork and vegetable broth (about 17 fl oz or 500 ml, homemade if possible)
    Bouillon maison au porc légumes de saison et épices
  • 1 tablespoonolive oil
    Comment doser facilement l huile d olive (arroser les salades,ajouter un filet d huile…)
  • Salt and pepper

    Thaw the tomatoes and red bell peppers if frozen.

    Thaw the broth if frozen.

    Wash the green bell pepper, cut it in half, and remove the seeds and white membranes.

    Separate, rinse, and dry the bay leaves.

    Strip the thyme leaves from the stems.

    Peel the onion.

    Thinly slice the onion.

    Peel the garlic.

    Remove the germ from the garlic and roughly chop it.

    Cut the pork tenderloin into cubes.

    Remove the stems from the figs.

    Cut the green bell pepper into pieces. Heat the olive oil in a Dutch oven (tip: add a pinch of salt to prevent splattering).

    Add the pork to the pot and brown on all sides over high heat.

    Once the pork is well browned, remove it from the pot with a slotted spoon and set aside.

    Add the onion to the pot and sauté lightly.

    Add the garlic and red bell pepper.

    Add the green bell pepper and mix well.

    Add half of the broth, stir to coat, reduce to medium heat, and return the pork to the pot.

    Add the bay leaves and thyme. Season with salt and pepper.

    Pour in the red wine, bring to a gentle boil, and cook for 10 minutes.

    Add the tomatoes and stir.

    Add the figs and stir.

    Add the remaining broth, stir, reduce to low heat, cover, and cook for 1 hour and 30 minutes.

    Let cool, then cook again over low heat for another 30 minutes.

Tips

Comment rendre l ail plus digeste

Ôter le germe avant de presser/ hacher les gousses d ail

Comment avoir du laurier du jardin toute l année

Je récolte et fais sécher à plat des petites branches de laurier lors de la taille de mon laurier sauce je les mets ensuite dans un grand panier tressé en bambou naturel

Comment congeler les figues du jardin

Les figuiers commencent à donner pour ne pas perdre ces fruits délicieux il suffit de les congeler

Comment doser facilement l huile d olive (arroser les salades,ajouter un filet d huile…)

Utiliser une verseuse conçue pour l huile d olive,j ai acheté la mienne en Espagne mais elles se trouvent facilement un peu partout

Comment utiliser rapidement les bouillons maison préalablement congelés

J utilise la fonction décongélation du micro ondes pour tous mes bouillons gain de temps assuré
