THIS ONE IS MY BEST ATTEMPT TO CUT OFF THE OIL COMPLETELY FROM MY RECIPE.
I have tried to explore new cooking technique in this recipe -USING SALT TO ROAST.
Last Sunday I visited a garden and on the outside was a roasted groundnut vendor roasting them using salt. I asked him what all can be roasted in this way. As per his advice, I have roasted munchies which are completely Oil-free.
This I have made for the NEW YEAR EVE

Soak 1/2 cup moong overnight. Drain and dry them on a clean cloth for 15 minutes. Take moong on a tawa and roast to evaporate the moisture in it for 3-4 minutes on slow gas.

Slowly the colour of moong will change. Now add 1/4 tsp salt and continue roasting the moong until crispy. Meanwhile, heat 2cups of salt in an iron kadhaai on slow gas for 4 minutes. Stir in between to avoid burning. Sieve and keep all ingredients cleaned and ready.

When the salt is hot enough start roasting the thick poha in small batches. Stir continuously and roast until crispy.. The poha will expand in size and colour will also change. Sieve away the salt and keep roasted poha in a big mixing kadhaai. Similarly, roast all the poha. Sieve the roasted moong also and keep them in the mixing bowl. Again reheat the hot sieved salt.

Now roast groundnuts, dariya and jowar dhani in the hot salt on slow gas. Do not burn.

Sieve each roasted crispy ingredient and transfer into the big mixing kadhaai. Now roast makkai poha in batches in the hot salt, sieve and transfer to the kadhaai.

Now make SUPER TASTY POPCORN in the hot salt. These will pop all around so cover and securely roast the corn. When done, sieve away the popcorn and transfer to the kadhaai.

Similarly, roast the murmura in salt until crispy. Sieve and transfer to the mixing kadhaai.

Now take some hot salt carefully in a small tadka pan and roast the curry leaves until crispy. Sieve and transfer to the kadhaai.

However, for the kids I made a tempering and added some masalas. But I used only 2 tsp of oil to coat the masalas. In 2tsp oil add hing and haldi. Add in some of the roasted munchies and mix well.

Add in some chilli powder if kids consume a bit spicy food.
This is also a guilt-free mixture. - 12
