Preparing meals for Ramadan can be a delightful and fulfilling experience. Freezer meals can be a lifesaver during Ramadan, especially when you want to focus more on your spiritual practices and less on daily cooking.
Masala gravy is one such prep that can be made ahead, frozen and used for different curries, vegetable.
Just make your basic masala gravy, if you like add the salt and chilli powder, I didn’t as I will be using this for different recipes and add the spices accordingly. If you prepare to sauté the sliced onions and chopped tomatoes, do so and once the gravy is ready, cool and then blend into a smooth paste before pouring in moulds.
To use, just remove one or two gravy cups and use for the recipe. Trust me, this saves a lot of time not just in Ramadan but also when you are time constrained and do not feel like prepping.

In a pot heat oil and add onion paste. Cook for 2-3 minutes.

Add ginger garlic paste and mix it well.

Add tomato paste, coriander powder, turmeric powder, cumin powder and cook for 2-3 minutes or until oil separates.

Let it cool at room temperature now.

Transfer the gravy to a cupcake baking tray. Freeze it overnight.

Unmould and transfer these cubes to an airtight bag and freeze for up to 2-3 months.
