Well I couldn't eat all my steak. So I had it for breakfast the next day.

Break the eggs and melt the butter in a cast iron skillet. Beat the eggs. Pour eggs in the skillet with the melted butter. Spread the Ortega sauce on one side of each tortilla. In another skillet heat the chopped up steak. Add the scrambled eggs and steak to the Ortega sauced tortilla sides. Heat the oil.

Roll the tortillas up. Place in the hot oil flap side down. Turn as needed till browned and crunchy wraps on all sides. Drizzle with more Ortega sauce.
