Cook the spinach in a skillet.

Season with spices, salt, and olive oil. Add the diced provolone cheese if using.

Use a spoon to make wells in the spinach and crack the eggs into them.

Cook until the eggs are set. You can cook them on the stovetop or bake in the oven.

Halfway through cooking or just before the eggs are done, sprinkle with grated cheese.
